In fact, most commercially available pears are picked before they are fully ripened. This is because unripened pears are harder, and are therefore less likely to bruise during the shipping process.
Pears will continue to ripen so long as they are kept at room temperature, rather than being kept cold. Refrigeration slows the ripening process, so pears should only be refrigerated after they have started to ripen.
